Homemade Cornmeal

Did you know? When you are out of cornmeal, and you have a craving for cornbread, don't run to the store. Just grab popping corn and grind your own!

Ingredients:
1 pound of popping corn kernels

Directions:
Divided the corn kernels in 3 or 4 equal batches. Grind each batch of the corn kernels in a blender until the consistency is that of typical cornmeal. Use a mesh strainer to make sure the grain is consistent, and if you have any larger pieces, just process them again in the blender.

Yield: 1 pound of popping corn will give you about 2 cups of cornmeal.
