The "corn" i...Note: I was confused too. The "corn" in these recipes is not USA sweet corn from a can or even fresh cut from the cob. The field corn here in Costa Rica is TOUGH. It is this high starch, fibrous (yet still fresh on the cob) that is used (and works!) to make the pancakes. Just added eggs and flour to my batter compared to your recipes. Both were absolutely delicious!
