Many years ago I discovered this delicious salad when my dear Tica friend made it for a dinner party. This is a wonderful twist on an old staple.
Ingredients:
3 cups of shredded cabbage
1 cup of shredded carrots
¼ cup of finely chopped onion
1 cup of diced fresh pineapple
¼ teaspoon celery seed (optional)
1 tablespoon finely chopped cilantro (optional)
½ cup of mayonnaise
2 tablespoons of apple cider vinegar
1½-2 teaspoons sugar (to taste)
Salt and pepper to taste
Directions:
Combine all the ingredients and chill for 30-45 minutes before serving
