Easy Homemade Yogurt (A Sous Vide Recipe)

I started making my own yogurt several years ago when I read somewhere that making yogurt is a very simple process. I can't remember the last time I actually bought any yogurt at the grocery store. There are all sorts of kitchen gadgets to help you make perfect yogurt. It can be made in an InstantPot, specialty Yogurt Makers, a Crockpot/Slow Cooker, or just a plain old soup pot. In my case, I already have the basic tools in my kitchen. Anyone can successfully make yogurt with these tools and instructions. Once you taste this stuff you'll never want the store-bought kind again.

Sous vide, which means “under vacuum” in French, refers to the process of vacuum-sealing food in a plastic food-safe bag, then heating the food to a very precise temperature using an immersion circulator in a water bath. Technically, this yogurt recipe is not "sous vide" because it is not "under vacuum", but it does take advantage of the precision temperature of the immersion circulator in a water bath. This method produces results that are sometimes difficult to achieve with other methods. The immersion circulator allows me to heat the water bath and hold it at an exact temperature for several hours. Yogurt requires a long incubation period to be successful. 

The process requires milk to be heated to 180°F. This will kill the bacteria in the milk so the whey proteins will denature and coagulate enhancing the viscosity and texture of the yogurt. Then the milk is cooled between 110°F-115°F and inoculated with active cultures from the last batch of yogurt, or some store-bought yogurt containing active cultures. The final step requires the milk to incubated for several hours to produce yogurt.

Equipment:
  • Soup pot
  • Spoon or whisk
  • Precision instant-read thermometer
  • Sous Vide Immersion Heater/Circulator
  • Heat safe container 
  • Clean Mason jar(s) with lids and rings
  • Colander (optional)
  • Cheesecloth, large dinner napkin, or large handkerchief (optional)
Ingredients:
  • 2 liters (½ gallon) of whole milk, or 2% milk
  • ¼ cup of yogurt with active cultures at room temperature. This can be the remainder of the last batch of homemade yogurt or some store-bought natural yogurt with active cultures. (I don't recommend using flavored store-bought yogurt because it's hard to know what other additives it might have.) 
Preparation:
  • Setup your heat-safe container and fill it with the amount of water recommended by the manufacturer of your immersion circulator. 
  • Set the temperature to 110°F/43°C
  • Set the time to a minimum of 8 hours. The maximum number of hours should not exceed 24. The longer the yogurt ferments the more tang it will have. If you want a less tangy or thick yogurt, ferment for around 8 hours. For a thick, tangy, and probiotic-rich yogurt, go closer to 24 hours. (I like it at about 12 to 18 hours)
Directions:
  • Pour the milk into the pot and place it over medium-high heat. Stir the milk frequently to prevent it from scorching on the bottom. 
  • Use the instant-read thermometer to watch the temperature and bring it up to 180°F. When it reaches 180°F, remove from the heat and set the pot in a sink full of icy cold water to let the milk cool down to between 110°F and 115°F, stirring regularly for an even cool down. 
  • Once the temperature drops between 110°F and 115°F, remove the pot of milk from the ice water and set it on the counter. 
  • Scoop out about a cup of warm milk and mix it with the plain yogurt you have at room temperature.
  • Gently, but thoroughly, stir this milk/yogurt mixture back into the rest of the milk using a side-to-side motion.
  • Pour this mixture into 2 or 3 quart-sized Mason jars. (I have ½ gallon Mason jars, so I use one ½ gallon jar and if I have a little extra milk mixture, I pour it into a 4 ounce Mason jar.)
  • Place the lids on the jars and put the rings on so they are snug, but not tight. I recommend screwing the rings with just 2 fingers until you meet a little resistance. If the rings are too tight the glass jars could break.
  • Place the jar(s) in the water bath and walk away.
  • When the timer on the immersion circulator goes off, remove the jars, let them rest for 30 minutes and then chill them in the refrigerator.
  • The yogurt will be pretty thick when it comes right out of the fermentation, and it will thicken even more as it chills. 
Note:  If after it’s chilled you want thicker yogurt, strain it through the colander lined with the cheesecloth (or napkin/handkerchief) over a large bowl. The longer you strain it, the thicker the yogurt. The whey that is strained out can be used as a substitute for water in bread dough and other recipes. My dogs even love a couple of tablespoons of whey on their food.

Enjoy the yogurt in all your favorite recipes, served over granola and topped with fruit, and so on. Just be sure to save that last ¼ cup of yogurt from this batch for your next batch.

Homemade Greek Style Yogurt in a Slow Cooker/Soup Pot

I had always heard it was easy to make yogurt, and you can find all sort of kitchen gadgets to help you make perfect yogurt. Guess what, you don't need anything but your crock pot/slow cooker, pressure cooker, or soup pot, and the basic tools you already have in your kitchen. My first attempt was a total success and I'm sure you can do it too, by following these easy instructions. Once you taste this stuff you'll never want the store-bought kind again.

The tools and ingredients you’ll need:
  • First, you need a Crock-Pot, Slow Cooker, pressure cooker, or stockpot with lid. I use either my old stovetop pressure cooker or a small 4-quart slow cooker. I can use up to 4 liters of milk in the pressure cooker, or 3 liters of milk in the slow cooker, to make this recipe. The same procedure will work with quarts of milk.
  • Instant read thermometer
  • Heavy beach towel
  • Colander
  • Cheesecloth, large dinner napkin, or large handkerchief
  • 3 or 4 liters of whole milk, or reduced-fat milk 2%
  • ¾ cup plain yogurt at room temperature, either from a previous batch or store-­bought. (**The yogurt must have live cultures in it to work.)
Instructions:

Method #1 - Stock Pot/Stove Top Pressure Cooker
  • Pour the milk into the pot and place it over medium-high heat. Stir the milk frequently to prevent it from scorching on the bottom. 
  • Use the instant-read thermometer to watch the temperature and bring it up to 180°F. When it reaches 180°F, remove from the heat and set the pot in a sink full of icy cold water to let the milk cool down to between 110° and 115°. 
  • Once the temperature drops between 110° and 115°F, scoop out about a cup of warm milk and mix it with the plain yogurt you have at room temperature.
  • Gently, but thoroughly, stir the mixture back into the milk in the pot using left and right motion.
  • Place a snug lid back on the pot/pressure cooker. (I like the pressure cooker because of the rubber gasket.)
Method #2 - Slow Cooker 
  • Pour the milk into a slow cooker set to HIGH and close the lid. It will take 2 to ­3 hours for the temperature of the milk to reach 180°F. 
  • Check it with an instant ­read thermometer, and when it reaches 180°F, turn the slow cooker off, close the lid, and let the milk cool down to between 110° and 115°. This could take another 2­ to 3 hours, so be patient. 
  • Once the temperature drops between 110° and 115°F, scoop out about a cup of warm milk and mix it with the plain yogurt you have at room temperature.
  • Gently, but thoroughly, stir the mixture back into the milk in a slow cooker using left and right motion. (Do not turn the slow cooker on)
  • Place the lid back on the slow cooker.
Both Methods - Continued
  • Wrap the pot/slow cooker with a large beach towel and let it sit undisturbed in a non-­drafty place at room temperature for 10 to ­12 hours, or overnight. The milk will have thickened and the whey will have started separating from the milk.
  • Line a colander with a cheesecloth, napkin, or handkerchief, and set the colander over a large glass bowl. I used a large dinner napkin and it made the perfect strainer for thick yogurt.
  • Now, pour the yogurt into the lined colander and let it strain for several hours. The longer you strain it, the thicker the yogurt will become. I strained mine for 4 hours in the refrigerator, and it yielded 5 cups of perfect Greek-style yogurt and 7 cups of whey. I discarded the whey, but it could be used in other recipes. My dogs love a few tablespoons of whey on their food.
  • Refrigerate the yogurt in an airtight glass jar or bowl for up to 2½ weeks.
  • Be sure and save ½ to ¾ cup of natural yogurt from this batch before you add any flavoring. This way you’ll have your own starter culture, and can make it again in a week, or two.
  • Flavor your yogurt with whatever you like: vanilla, cinnamon, honey, nuts, fruits, sweeteners, etc.
